How to make it

Add all ingredients to a rocks glass, fill with ice and stir briefly. Garnish with an orange twist. IBA allows 2 drops of Angostura bitters as an option.

About the Rabo de Galo

Portuguese for 'rooster's tail', a literal translation of 'cocktail'. Brazil's bittersweet cachaça classic took off in 1950s São Paulo after Cinzano started making vermouth locally.

  • No cachaça? Use Rhum Agricole (Both are sugarcane-juice spirits)
  • No cachaça? Use White Rum (Cleaner, less grassy)
  • No sweet vermouth? Use Punt e Mes (Noticeably more bitter)
  • No cynar? Use Amaro Nonino (Lighter and more orangey)
  • No cynar? Use Campari (Brighter and more bitter)
