How to make it

Add the mezcal, grapefruit juice, lime juice and simple syrup to a highball glass with ice. Top with soda water and stir gently. Garnish with a grapefruit wedge and a salt rim (optional).

About the Palomezcal

The Palomezcal is a smoky twist on the classic Mexican Paloma, substituting mezcal for tequila. The smoky agave spirit pairs beautifully with the bitter grapefruit notes.

Missing something?

  • No mezcal? Use Tequila (Loses the smoke; a drop of Islay scotch brings some back)
  • No mezcal? Use Tequila Reposado (Loses the smoke)
  • No grapefruit juice? Use Grapefruit (Squeeze fresh: 1 grapefruit gives about 150 ml)
  • No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No lime juice? Use Lemon Juice (Softer, different aroma)
  • No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No simple syrup? Use Honey Syrup (Adds honey flavour)
