  • No mezcal? Use Tequila (Loses the smoke; a drop of Islay scotch brings some back)
  • No mezcal? Use Tequila Reposado (Loses the smoke)
  • No white rum? Use Gold Rum (A little richer)
  • No white rum? Use Cachaça (Grassier and funkier)
  • No maraschino liqueur? Use Kirsch (Dry cherry spirit; add a little simple syrup)
  • No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No simple syrup? Use Honey Syrup (Adds honey flavour)
  • No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No lime juice? Use Lemon Juice (Softer, different aroma)
  • No egg white? Use Aquafaba (Chickpea Water) (Chickpea water: same foam and vegan. Use the same amount)
