Piña Colada Slush

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts.
Ingredients
- White Rum150ml5 oz
- Coconut Cream150ml5 oz
- Pineapple Juice300ml10 oz
- Water400ml13¼ oz
How to make it
Whisk the coconut cream into the pineapple juice until smooth, then stir in the rum and water. Pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready. Serve in hurricane glasses with a pineapple wedge and a cherry.
About the Piña Colada Slush
Usually credited to the Caribe Hilton in San Juan in 1954, the Piña Colada has been Puerto Rico's official drink since 1978. Use sweetened cream of coconut: it supplies most of the sugar the slush needs.
