How to make it

  1. Add all ingredients to a mixing glass with ice and stir until well chilled.
  2. Strain into a chilled coupe and garnish with a cherry.

Tip: Stir with plenty of cold, hard ice for 20 to 30 seconds. You want it chilled and silky, not cloudy.

About the Newark

Jim Meehan and John Deragon created it at PDT in New York in 2007 as a riff on the Brooklyn, with Fernet-Branca in place of Amer Picon. Instead of another Brooklyn neighbourhood, they looked across the river and named it after a New Jersey city, home state of Laird's apple brandy.

Missing something?

  • No Apple Brandy? Use Calvados
  • No Apple Brandy? Use Brandy (Grape instead of apple)
  • No Sweet Vermouth? Use Punt e Mes (Noticeably more bitter)
  • No Fernet-Branca? Use Jägermeister (Similar herbal profile, sweeter)
  • No Maraschino Liqueur? Use Kirsch (Dry cherry spirit; add a little simple syrup)

All swaps for Apple Brandy, Sweet Vermouth, Fernet-Branca and Maraschino Liqueur
