The Earl Grey MarTEAni is a herbal, citrusy sour made with Earl Grey Tea-Infused Gin, Lemon Juice, Simple Syrup and Egg White. It is shaken and served in a cocktail glass, about 10% ABV.

How to make it

  1. If desired, moisten half the rim of a chilled cocktail glass with lemon and coat it with sugar.
  2. Shake all ingredients hard with ice for about ten seconds, then strain into the glass.
  3. Garnish with a lemon twist.

Tip: Fill the shaker with ice and shake hard for 10 to 15 seconds, until the tin is frosty.

Audrey Saunders made this tea-infused gin sour a signature drink at Pegu Club in New York. Earl Grey brings bergamot and tea tannins to the gin botanicals, while egg white gives the drink its foam.

  • No Simple Syrup? Use Rich Simple Syrup (More concentrated, so use less)
