Ingredients
- 45mlTequila
- 30mlLime Juice
- 15mlRich Simple Syrup
- 15mlRed Wine
How to make it
- Shake the blanco tequila, lime juice and rich simple syrup hard with ice and fine strain into a chilled coupe.
- Pour the red wine slowly over the back of a bar spoon so it floats on top as a dark red layer.
- Garnish with a lime wedge; skip the salt rim, which clashes with the wine.
Tip: Fill the shaker with ice and shake hard for 10 to 15 seconds, until the tin is frosty.
About the Devil's Margarita
It borrows the red wine float from the New York Sour and puts it on a tequila sour. Strictly speaking it is not a Margarita, as there is no orange liqueur, but the blood-red layer earns it the devilish name.
Missing something?
- No Tequila? Use Tequila Reposado (Rounder, a little oak)
- No Tequila? Use Mezcal (Adds smoke)
- No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
- No Lime Juice? Use Lemon Juice (Softer, different aroma)
- No Rich Simple Syrup? Use Simple Syrup (Less concentrated, so use a little more)
- No Rich Simple Syrup? Use Demerara Syrup (Usually made 1:1 with a toffee note, so use a little more)
All swaps for Tequila, Lime Juice and Rich Simple Syrup
