Sleepy Hollow

The Sleepy Hollow is a citrusy, herbal smash made with Mint Leaves, Gin, Apricot Brandy, Lemon Juice and Rich Simple Syrup. It is muddled and served in an old-fashioned glass, about 17% ABV.

How to make it

  1. Gently press the mint leaves in the base of a shaker to bruise them.
  2. Add the gin, apricot brandy, lemon juice and rich simple syrup, shake with ice and fine strain into an old-fashioned glass filled with crushed ice.
  3. Garnish with a lemon wheel and a mint sprig and serve with a straw.

Tip: Press gently when you muddle. Crushing herbs too hard releases bitter flavours.

About the Sleepy Hollow

Named after Washington Irving's 1820 story The Legend of Sleepy Hollow, home of the Headless Horseman. This version is Difford's Guide's update of a gin, apricot and mint drink from the early 1930s.

  • No Gin? Use Old Tom Gin (Sweeter and rounder, so cut the syrup a little)
  • No Gin? Use Genever (Maltier and rounder)
  • No Apricot Brandy? Use Peach Schnapps (Thinner and sweeter)
  • No Apricot Brandy? Use Peach Brandy (Peach instead of apricot)
  • No Lemon Juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
  • No Lemon Juice? Use Lime Juice (Sharper, different aroma)
  • No Rich Simple Syrup? Use Simple Syrup (Less concentrated, so use a little more)
  • No Rich Simple Syrup? Use Demerara Syrup (Usually made 1:1 with a toffee note, so use a little more)
