Daiquiri Slush

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts.
Ingredients
- White Rum220ml7¼ oz
- Lime Juice100ml3⅓ oz
- Simple Syrup170ml5¾ oz
- Water510ml17 oz
How to make it
Combine the rum, lime juice, simple syrup and water in a jug. Stir until the syrup is fully mixed in, then pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready. Serve in chilled coupes with a lime wheel.
About the Daiquiri Slush
Named after the Daiquirí iron mines near Santiago de Cuba, where American engineer Jennings Cox is credited with mixing rum, lime and sugar around 1900. Havana's El Floridita later made the frozen version famous.

- No white rum? Use Gold Rum (A little richer)
- No white rum? Use Cachaça (Grassier and funkier)
- No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
- No lime juice? Use Lemon Juice (Softer, different aroma)
- No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
- No simple syrup? Use Honey Syrup (Adds honey flavour)
