This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts.

How to make it

Whisk the rum, strawberry purée, lime juice, simple syrup and water together until smooth. Stir until the syrup is fully mixed in, then pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready. Serve in hurricane glasses with a strawberry.

About the Strawberry Daiquiri Slush

The fruity cousin of the frozen Daiquiri. Using purée instead of whole berries keeps the mix smooth enough for a slushie machine.

  • No white rum? Use Gold Rum (A little richer)
  • No white rum? Use Cachaça (Grassier and funkier)
  • No strawberry purée? Use Strawberries (Muddle 2-3 berries per 30 ml)
  • No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No lime juice? Use Lemon Juice (Softer, different aroma)
  • No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No simple syrup? Use Honey Syrup (Adds honey flavour)
