Mojito Slush

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts.

How to make it

Gently bruise the mint leaves in the simple syrup, leave for 10 minutes, then strain the leaves out so no solids go into the machine. Stir the mint syrup with the rum, lime juice and water, pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready. Serve in highball glasses with a mint sprig and a lime wedge.

  • No white rum? Use Gold Rum (A little richer)
  • No white rum? Use Cachaça (Grassier and funkier)
  • No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No lime juice? Use Lemon Juice (Softer, different aroma)
  • No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No simple syrup? Use Honey Syrup (Adds honey flavour)
