The Mai Tai Slush is a citrusy frozen slushie made with White Rum, Dark Rum, Lime Juice, Triple Sec and more. It is mixed as a 1 litre batch and frozen in a slushie machine, about 10% ABV.

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts. How the sugar and alcohol limits work

How to make it

  1. Stir the rums, lime juice, triple sec, orgeat, simple syrup and water together until the syrups are mixed in.
  2. Pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready.
  3. Serve in old-fashioned glasses with a sprig of mint and a lime shell.

About the Mai Tai Slush

Trader Vic Bergeron said he created the Mai Tai in Oakland in 1944; the name comes from the Tahitian word maita'i, meaning good.

  • No White Rum? Use Gold Rum (A little richer)
  • No White Rum? Use Cachaça (Grassier and funkier)
  • No Dark Rum? Use Aged Rum (Lighter, less molasses)
  • No Dark Rum? Use Gold Rum (Lighter, less molasses)
  • No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No Lime Juice? Use Lemon Juice (Softer, different aroma)
  • No Triple Sec? Use Grand Marnier (Richer and cognac-based)
  • No Triple Sec? Use Blue Curaçao (Same flavour, but turns the drink blue)
  • No Simple Syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No Simple Syrup? Use Honey Syrup (Adds honey flavour)
