Ingredients
- Gin45ml1½ oz
- Rhubarb Syrup20ml⅔ oz
- Lemon Juice20ml⅔ oz
- Egg White1
- Soda WaterTop up
How to make it
Dry shake gin, rhubarb syrup, lemon juice and egg white. Add ice and shake again. Strain into a highball glass without ice. Top with soda water.

The Rhubarb Fizz is a seasonal spin on the classic Gin Fizz, with tart rhubarb syrup adding a distinctly British spring flavour.

- No gin? Use Old Tom Gin (Slightly sweeter)
- No gin? Use Genever (Maltier and rounder)
- No lemon juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
- No lemon juice? Use Lime Juice (Sharper, different aroma)
- No egg white? Use Aquafaba (Chickpea Water) (Chickpea water: same foam and vegan. Use the same amount)
