- Lemon Juice30ml1 oz
- Simple Syrup15ml½ oz
- Soda Water60ml2 oz
How to make it
Build all ingredients in a highball glass filled with ice. Stir gently. Garnish with lemon and cherry.

Originally made with genever and named after a London waiter. Tom Collins uses Old Tom gin.
Missing something?
- No gin? Use Old Tom Gin (Slightly sweeter)
- No gin? Use Genever (Maltier and rounder)
- No lemon juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
- No lemon juice? Use Lime Juice (Sharper, different aroma)
- No simple syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
- No simple syrup? Use Honey Syrup (Adds honey flavour)
