How to make it

Stir all ingredients with ice in a mixing glass until well chilled. Strain into a chilled cocktail glass and garnish with lemon zest.

About the Cardinale

A drier cousin of the Negroni, with dry vermouth in place of sweet. It is credited to Giovanni Raimondo at the Hotel Excelsior in Rome around 1950, reportedly made for a visiting cardinal.

  • No gin? Use Genever (Maltier and rounder)
  • No dry vermouth? Use Bianco Vermouth (Sweeter)
  • No dry vermouth? Use Lillet Blanc (Fruitier and sweeter)
  • No campari? Use Aperol (Lighter, sweeter and less bitter)
