This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts. How the sugar and alcohol limits work

Ingredients

How to make it

  1. Stir the peach purée, simple syrup, lemon juice and water together, then add the prosecco slowly so it doesn't foam over.
  2. Pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready.
  3. Serve in champagne flutes.

About the Bellini Slush

Giuseppe Cipriani created the Bellini at Harry's Bar in Venice in 1948 and named it after the painter Giovanni Bellini for its pink glow. White peach purée gives the classic colour.

Missing something?

  • No Prosecco? Use Champagne (Drier and toastier)
  • No Simple Syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No Simple Syrup? Use Honey Syrup (Adds honey flavour)
  • No Lemon Juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
  • No Lemon Juice? Use Lime Juice (Sharper, different aroma)

All swaps for Simple Syrup and Lemon Juice
