Hugo Spritz Slush

The Hugo Spritz Slush is a herbal frozen slushie made with Prosecco, Elderflower Liqueur, Lime Juice, Simple Syrup and Water. It is mixed as a 1 litre batch and frozen in a slushie machine, about 8% ABV.

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts. How the sugar and alcohol limits work

How to make it

  1. Stir the elderflower liqueur, lime juice, simple syrup and water together, then add the prosecco slowly so it doesn't foam over.
  2. Pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready.
  3. Serve in wine glasses with a sprig of mint and a lime wheel.

About the Hugo Spritz Slush

Bartender Roland Gruber created the Hugo in South Tyrol, northern Italy, in 2005, first with lemon balm syrup; elderflower took over as the drink spread across the Alps.

  • No Prosecco? Use Champagne (Drier and toastier)
  • No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No Lime Juice? Use Lemon Juice (Softer, different aroma)
  • No Simple Syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
  • No Simple Syrup? Use Honey Syrup (Adds honey flavour)
