Art of Choke
The Art of Choke is a bitter, herbal spirit-forward cocktail made with White Rum, Cynar, Green Chartreuse, Lime Juice and Demerara Syrup. It is stirred and served in a rocks glass, at about 23% ABV.

Ingredients
- 30mlWhite Rum
- 30mlCynar
- 7.5mlGreen Chartreuse
- 3.75mlLime Juice
- 3.75mlDemerara Syrup
How to make it
- Add all ingredients to a mixing glass with ice (use rich 2:1 demerara syrup) and stir until well chilled.
- Strain into a rocks glass over one large ice cube and garnish with a sprig of fresh mint.
Tip: Stir with plenty of cold, hard ice for 20 to 30 seconds. You want it chilled and silky, not cloudy.
About the Art of Choke
Kyle Davidson created it at The Violet Hour in Chicago in 2008, starting from a guest's request for something with rum and bitters. The name plays on the artichoke, the best-known botanical in Cynar.

- No Cynar? Use Campari (Brighter and more bitter)

- No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)

- No Demerara Syrup? Use Simple Syrup (Lighter, without the toffee notes)
