Test Pilot
The Test Pilot is a citrusy, spicy tiki cocktail made with Dark Rum, White Rum, Triple Sec, Falernum and more. It is frozen and served in an old-fashioned glass, about 15% ABV.

Ingredients
- 45mlDark Rum
- 22.5mlWhite Rum
- 15mlTriple Sec
- 15mlFalernum
- 15mlLime Juice
- 1 dashAngostura Bitters
- 6 dropsAbsinthe
How to make it
- Blend all ingredients with 120g of crushed ice, about a cup, for five seconds.
- Pour unstrained into a double old-fashioned glass and garnish with a cherry.
Tip: Blend in short bursts and stop as soon as it is smooth, so it stays thick.
About the Test Pilot
Donn Beach created the Test Pilot around 1941. Its combination of rum, citrus, falernum and anise inspired later tiki drinks including the Jet Pilot.

- No Dark Rum? Use Aged Rum (Lighter, less molasses)
- No Dark Rum? Use Gold Rum (Lighter, less molasses)
- No White Rum? Use Gold Rum (A little richer)
- No White Rum? Use Cachaça (Grassier and funkier)
- No Triple Sec? Use Grand Marnier (Richer and cognac-based)
- No Triple Sec? Use Blue Curaçao (Same flavour, but turns the drink blue)
- No Falernum? Use Velvet Falernum (The liqueur version; slightly less sweet)
- No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
- No Lime Juice? Use Lemon Juice (Softer, different aroma)
- No Angostura Bitters? Use Peychaud's Bitters (Lighter, with more anise)
