How to make it

Muddle a thin slice of fresh ginger in a shaker. Add the remaining ingredients and shake vigorously with ice. Strain into a chilled tiki mug filled with pebbled ice. Garnish with citrus and a dehydrated pineapple slice.

About the IBA Tiki

Created in Cuba by bartender Diosmel Mendoza Medrano and added to the IBA list in 2024, it pairs a dark rum with a smoky, whisky-cask-finished rum.

Missing something?

  • No dark rum? Use Aged Rum (Lighter, less molasses)
  • No dark rum? Use Gold Rum (Lighter, less molasses)
  • No smoked rum? Use Dark Rum (Loses the smoke; a barspoon of Islay Scotch brings it back)
  • No smoked rum? Use Aged Rum (No smoke, but similar depth)
  • No amaretto? Use Frangelico (Hazelnut instead of almond)
  • No frangelico? Use Amaretto (Almond instead of hazelnut)
  • No maraschino liqueur? Use Kirsch (Dry cherry spirit; add a little simple syrup)
  • No passion fruit purée? Use Passionfruit Puree
  • No passion fruit purée? Use Passion Fruit (The pulp of 1 fruit is about 15 ml)
  • No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No lime juice? Use Lemon Juice (Softer, different aroma)
