How to make it

  1. Gently stir the Champagne until completely flat, then measure it.
  2. Combine it with the gin, lemon juice, simple syrup and water.
  3. Chill the mixture, then pour it into the slushie machine and run the alcoholic slush setting until frozen.
  4. Do not add ice to the machine.
  5. Serve in Champagne flutes.

About the French 75 Slush

The classic French 75 combines gin, lemon, sugar and Champagne. This slush keeps those flavours but lets the sparkling wine go flat before freezing.

  • No Gin? Use Old Tom Gin (Slightly sweeter)
  • No Gin? Use Genever (Maltier and rounder)
  • No Champagne? Use Prosecco (Fruitier and a little sweeter)
  • No Lemon Juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
  • No Lemon Juice? Use Lime Juice (Sharper, different aroma)
  • No Simple Syrup? Use Rich Simple Syrup (More concentrated, so use less)
  • No Simple Syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
