Don's Special Daiquiri

Ingredients
- Gold Rum30ml1 oz
- White Rum15ml½ oz
- Passion Fruit Syrup15ml½ oz
- Lime Juice15ml½ oz
- Honey Syrup15ml½ oz
How to make it
Flash blend all ingredients with crushed ice for a few seconds. Pour into a footed glass and fill with more crushed ice. Garnish with half a passion fruit. IBA specifies Jamaican gold rum and Cuban-style white rum.
About the Don's Special Daiquiri
Donn Beach, founder of Don the Beachcomber, built this daiquiri around two rums, passion fruit and honey. It follows his habit of layering several rums to get a flavour no single bottle could give.
Missing something?
- No gold rum? Use Aged Rum
- No gold rum? Use Dark Rum (Heavier molasses notes)
- No white rum? Use Gold Rum (A little richer)
- No white rum? Use Cachaça (Grassier and funkier)
- No passion fruit syrup? Use Passion Fruit Purée (Tarter; add a little simple syrup)
- No lime juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
- No lime juice? Use Lemon Juice (Softer, different aroma)
- No honey syrup? Use Honey (Mix with the same amount of warm water first)
- No honey syrup? Use Agave Syrup
