Bitter Mai Tai
The Bitter Mai Tai is a bitter, tropical tiki cocktail made with Campari, Dark Rum, Triple Sec, Lime Juice and Orgeat. It is shaken and served in an old-fashioned glass, about 14% ABV.

Ingredients
- 45mlCampari
- 22.5mlDark Rum
- 15mlTriple Sec
- 30mlLime Juice
- 22.5mlOrgeat
How to make it
- Shake all ingredients with ice and strain into an old-fashioned glass filled with crushed ice.
- Top with more crushed ice and garnish with a mint sprig.
- A Jamaican rum and an orange curaçao work best.
Tip: Fill the shaker with ice and shake hard for 10 to 15 seconds, until the tin is frosty.
About the Bitter Mai Tai
Jeremy Oertel made Campari the main spirit of a Mai Tai at Dram in Brooklyn, and the recipe ran in the Wall Street Journal in 2011. Jamaican rum, curaçao, lime and orgeat keep the classic structure around the bitter base.
