Bahama Mama Slush

This makes a 1 litre batch for a slushie machine. The sugar and alcohol are balanced so it freezes properly, so stick to the amounts.
Ingredients
- Dark Rum170ml5¾ oz
- Coconut Cream120ml4 oz
- Pineapple Juice420ml14 oz
- Orange Juice260ml8¾ oz
- Grenadine30ml1 oz
How to make it
Whisk the coconut cream into the pineapple juice until smooth, then stir in the rum, orange juice and grenadine. Pour into the slushie machine and run its alcoholic preset (the batch card shows which one) until the slush is ready. Serve in hurricane glasses with a pineapple wedge and a cherry.
About the Bahama Mama Slush
Nassau bartender Oswald Greenslade claimed to have created the Bahama Mama in the 1960s, naming it after a calypso singer, though the drink seems to be older. Use sweetened cream of coconut, as in a Piña Colada.

- No dark rum? Use Gold Rum (Lighter, less molasses)
- No coconut cream? Use Cream (Loses the coconut flavour)
- No orange juice? Use Orange (Squeeze fresh: 1 orange gives about 70 ml)
- No orange juice? Use Blood Orange Juice (Berry-like and deep red)
- No grenadine? Use Raspberry Syrup (Berry instead of pomegranate)
