How to make it

  1. Shake the rum, orange liqueur, lime juice and bitters with ice and strain into an ice-filled highball glass.
  2. Top with ginger beer and garnish with orange and lime wheels.

Tip: Fill the shaker with ice and shake hard for 10 to 15 seconds, until the tin is frosty.

About the Añejo Highball

Dale DeGroff created it in the 1990s as a tribute to Cuban bartenders; "añejo" refers to the aged rum, not tequila. It appears in his book The Craft of the Cocktail.

  • No Aged Rum? Use Gold Rum
  • No Aged Rum? Use Dark Rum (Heavier molasses notes)
  • No Triple Sec? Use Grand Marnier (Richer and cognac-based)
  • No Triple Sec? Use Blue Curaçao (Same flavour, but turns the drink blue)
  • No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
  • No Lime Juice? Use Lemon Juice (Softer, different aroma)
  • No Angostura Bitters? Use Peychaud's Bitters (Lighter, with more anise)
  • No Ginger Beer? Use Ginger Ale (Milder and sweeter)
