History
Pumpkin spice became a seasonal craze after Starbucks launched its Pumpkin Spice Latte in 2003. Coffee-syrup makers followed with bottled versions, and bartenders picked them up for autumn and Halloween menus.
How it’s made
Sugar is dissolved in water and simmered with pumpkin purée and pumpkin pie spices, then strained. Bottled versions use natural pumpkin and spice flavourings, and some add a little pumpkin juice.
