Ingredients
- 8 leavesMint Leaves
- 30mlLime Juice
- 15mlSimple Syrup
- Top upSoda Water
How to make it
- Gently press the mint with the lime juice and simple syrup in a highball glass to release its oils without shredding the leaves.
- Fill with crushed ice, top with soda water and stir from the bottom.
- Garnish with a mint sprig and a lime wheel.
Tip: Press gently when you muddle. Crushing herbs too hard releases bitter flavours.
About the Virgin Mojito
The Mojito is Havana's mix of rum, mint, lime, sugar and soda. Leave out the rum and you keep the crisp, herbal highball.

- No Lime Juice? Use Lime (Squeeze fresh: 1 lime gives about 25 ml)
- No Lime Juice? Use Lemon Juice (Softer, different aroma)
- No Simple Syrup? Use Sugar (1 tsp sugar is about 7.5 ml syrup; stir until dissolved)
- No Simple Syrup? Use Honey Syrup (Adds honey flavour)
