Tropical Itch

About the Tropical Itch

Harry Yee created the Tropical Itch at Waikiki's Hawaiian Village Hotel in the late 1950s, serving it with a bamboo backscratcher. This version comes from Fairweather in San Diego and uses passion fruit syrup with pineapple and lemon.

Missing something?

• No Dark Rum? Use Aged Rum (Lighter, less molasses)
• No Dark Rum? Use Gold Rum (Lighter, less molasses)
• No Overproof Rum? Use Dark Rum (Less alcohol and less punch)
• No Overproof Rum? Use Aged Rum (Less alcohol and less punch)
• No Lemon Juice? Use Lemon (Squeeze fresh: 1 lemon gives about 30 ml)
• No Lemon Juice? Use Lime Juice (Sharper, different aroma)
• No Triple Sec? Use Grand Marnier (Richer and cognac-based)
• No Triple Sec? Use Blue Curaçao (Same flavour, but turns the drink blue)
• No Passion Fruit Syrup? Use Passion Fruit Purée (Tarter; add a little simple syrup)
• No Passion Fruit Syrup? Use Fassionola (Adds berry and pineapple notes alongside passion fruit)

All swaps for Bourbon, Dark Rum, Overproof Rum, Lemon Juice, Triple Sec and Passion Fruit Syrup
