History
A zero-proof Negroni needs a red bitter, so brands from Lyre's to the French liqueur house Giffard make a dedicated one. Amsterdam's Mesamis sells one inspired by the Italian bitters.
How it’s made
Most are bittered with gentian root and quinine or cinchona, flavoured with bitter orange and grapefruit, sweetened and coloured red. Giffard's non-alcoholic range macerates fruit and plants in wine vinegar instead of alcohol; Mesamis distills its botanicals and adds about 19.5 g of sugar per 100 ml.
