The Averna Stout Flip is a sweet, bitter creamy cocktail made with Averna, Stout, Whole Egg and Angostura Bitters. It is shaken and served in a wine glass.

How to make it

  1. Crack the egg into a shaker, then add the Averna, stout and bitters.
  2. Fill with ice and shake hard until cold and frothy.
  3. Strain into a wine glass and finish with freshly grated nutmeg.
  4. A rich chocolate or oatmeal stout works best.

Tip: Fill the shaker with ice and shake hard for 10 to 15 seconds, until the tin is frosty.

About the Averna Stout Flip

Jacob Grier created it in Portland, Oregon, and published it in his book Cocktails on Tap. It builds on the old idea that dark beer and dark spirits belong together, with the whole egg turning the pair into something close to a bittersweet milkshake.
